Spicy Oven Baked Tilapia

Cook Time: 35 minutes
Total Time: 55 minutes
Servings: 2 people
Ingredients
2 Whole Tilapia
6 Lemon Slices
2 Handfuls of Fresh Basil Leaves
4 Scotch Bonnet
1/3 cup Vegetable Oil
1/3 cup Vegetable Stock
1 Green Pepper
4 tsp Salt
Instructions
Blend the scotch bonnet, oil, stock, green pepper, and basil together to form a marinade.
Gash the tilapia by making two straight marks on each side.
Stuff the lemon slices into the fish, where you gashed it. Place the tilapia in a large aluminum foil and drench it in the marinade. Cover the aluminum, wrapping the fish completely. Let it marinate at room temperature for 20 minutes.
Preheat the oven to 375F degrees. Bake while completely wrapped for 35 minutes,
Serve with vegetables and carbohydrates of your choice. I chose grilled plantains and fresh sweet bell peppers.

Tangy Shrimp Mango Sauce
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 2 people
Ingredients
1/2 pound of deveined, raw shrimps
2 cups of diced mangoes
1 cup of dry white wine
1/2 cup of diced campari tomatoes
1 handful of chopped fresh parsley
1 tsp of garlic salt
1 tsp of olive oil
Instructions
In a flat pan, heat the oil and add the tomatoes and mangoes. Stir fry for 2 minutes.
Add the white wine, shrimps, and fresh parsley. Apply medium heat for 3 minutes, stirring occasionally
Add garlic salt and stir fry for 5 minutes on medium heat. Serve with carbohydrate of your choice. I recommend fried plantains and rice.
